S’MORES CUPCAKES

Leave your marshmallow-roasting stick at the door—you can make these s’mores in the kitchen.

Time: 60 minutes

SUPPLIES

•Measuring spoons and cups

•Mixing bowls

•Cupcake pan and paper liners

•Electric mixer

MAKING THE CUPCAKES

Ingredients:

•1 package yellow cake mix

•1⅓ cups water

•3 eggs

•⅓ cup vegetable oil

•½ teaspoon vanilla

•1 cup chocolate-covered graham crackers (about 12), chopped into large pieces

Before You Begin:

•Preheat the oven to 350 degrees.

•Line the cupcake pan with the paper liners.

Directions:

1.In a large mixing bowl, combine the cake mix, water, eggs, oil, and vanilla.

2.With your mixer at medium-low speed, beat the batter until well mixed.

3.Turn the mixer up to medium-high speed and beat for 2 more minutes.

4.Stir in the chopped graham crackers.

5.Divide the batter among cupcake liners.

6.Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.

7.Cool 10 minutes in pan and then transfer the cupcakes to racks to cool completely.

MAKING THE FROSTING

Ingredients:

•1 (7-ounce) jar of marshmallow cream

•½ cup butter, at room temperature

•2 cups powdered sugar

•1–2 teaspoons milk

•18 Teddy Grahams honey graham snacks and broken chocolate bars

Directions:

1.Heat the marshmallow cream in the microwave for 15–20 seconds.

2.Transfer the warm marshmallow cream into a large mixing bowl.

3.Add the butter and powdered sugar and beat at medium speed.

4.Starting with ½ teaspoon at a time, add enough milk until marshmallow frosting becomes spreadable.

5.Frost the cupcakes and decorate each with a Teddy Graham and pieces of broken chocolate.
